How about a Hot Air Ballooning experience? I have been on a hot air balloon and it was brilliant, the only downside was the heat above your head from the burners, but at least they kept me warm!

Landing was also a lot of fun, especially as I had to jump out with my camcorder in one hand and try and hold onto the balloons basket to try and pull it down to the ground with others whilst also jumping a dyke in a farmers field.
